They have to shed their old shell and when they exit that shell, they are soft for about 2 to 3 hours. Then their shell starts to turn hard again. A true delicacy during the season! Tonight we will have 4 different preparations of soft-shell crabs! We will start with soft shell crabs in a Campari Negroni sauce, soft shell crab tempura with Hijiki seaweed salad, soft shell crabs with blood oranges and hazelnuts, and finish with a soft shell crab BLT slider with house made bacon!
